This soft, lightly sweet strawberry loaf is made with nourishing whole-food ingredients and boosted with Zentein Collagen Peptides for extra protein. Studded with juicy strawberries and perfectly tender, itโs ideal for breakfast, snack time, or a healthier dessert the whole family will love. Itโs simple to make, versatile, and easily adaptable into muffins or fun flavour variations.
Ingredients
Wet Ingredients
- 3 eggs
- ยผ cup pure maple syrup
- ยพ cup yogurt
- 1 tsp vanilla extract
- 1 tbsp coconut oil, melted and cooled (or substitute melted butter or olive oil)
Dry Ingredients
- 2 cups oat flour (gluten-free if needed)
- 1 tsp baking powder
- ยฝ tsp baking soda
- ยผ tsp salt
- 8 servings Zentein Pure Bovine Collagen Peptide Protein Powder or Zentein Superfood Collagen Protein Powder
Mix-Ins
- 1ยผ cups diced strawberries
Instructions
- Preheat the oven to 350ยฐF (175ยฐC). Line a loaf pan or square cake pan with parchment paper.
- In a medium bowl, whisk together all wet ingredients until smooth.
- In a large bowl, combine all dry ingredients.
- Make a well in the dry ingredients and pour in the wet mixture. Stir until fully combined.
- Fold in the diced strawberries gently.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35โ45 minutes, depending on the pan used. Bake until a tester inserted into the centre comes out clean.ย
- Cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely.
Optional Variations
๐งMuffins: Use a lined muffin tin or muffin cups and bake for 20โ25 minutes, until a tester comes out clean.
๐Lemon Strawberry Loaf: Add 1 tbsp lemon zest to the batter.
๐ซChocolate-Covered Strawberry Loaf: Add โ cup Zentein Super Chocolate, broken into pieces, or chocolate chips.
