This cozy apple cinnamon cake is soft, lightly sweet, and packed with protein thanks to Zentein Collagen. Made with oats, eggs, and yogurt, it’s a nourishing option for breakfast, snack time, or a healthier dessert that feels like a treat.

Ingredients

  1. 2 medium apples, chopped
  2. 1 cup oats, blended into flour
  3. 6 servings Zentein Pure Bovine Collagen powder or Zentein Superfood Collagen Protein Powder.
  4. 2 eggs
  5. ¾ cup plain, unsweetened yogurt
  6. 1 teaspoon ground cinnamon
  7. 1 teaspoon baking powder
  8. Handful of chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a square cake pan with parchment paper.
  2. In a small bowl, beat the eggs, then stir in the yogurt until smooth.
  3. In a medium to large bowl, combine the blended oats, collagen powder, cinnamon, and baking powder.
  4. Add the wet ingredients to the dry ingredients and mix until combined.
  5. Fold in the chopped apples and walnuts, if using.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool slightly before removing from the pan and slicing into squares.
  9. Store in an airtight container at room temperature for 1–2 days or refrigerate to keep fresh longer. Slices also freeze great!
