This cozy apple cinnamon cake is soft, lightly sweet, and packed with protein thanks to Zentein Collagen. Made with oats, eggs, and yogurt, it’s a nourishing option for breakfast, snack time, or a healthier dessert that feels like a treat.
Ingredients
- 2 medium apples, chopped
- 1 cup oats, blended into flour
- 6 servings Zentein Pure Bovine Collagen powder or Zentein Superfood Collagen Protein Powder.
- 2 eggs
- ¾ cup plain, unsweetened yogurt
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- Handful of chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a square cake pan with parchment paper.
- In a small bowl, beat the eggs, then stir in the yogurt until smooth.
- In a medium to large bowl, combine the blended oats, collagen powder, cinnamon, and baking powder.
- Add the wet ingredients to the dry ingredients and mix until combined.
- Fold in the chopped apples and walnuts, if using.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool slightly before removing from the pan and slicing into squares.
- Store in an airtight container at room temperature for 1–2 days or refrigerate to keep fresh longer. Slices also freeze great!
